- 8 oz pasta (farfalle or penne)
- 5 oz Boursin cheese
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- Salt and pepper, to taste
- Chopped parsley for garnish
Instructions
- In a large pot, cook the pasta according to package instructions. Drain and set aside.
- In a skillet over medium heat, warm the olive oil. Add the diced chicken and cook until golden brown and cooked through, seasoning with salt and pepper. Remove the chicken and set aside.
- Using the same skillet, add the minced garlic and sauté for about a minute until fragrant.
- Pour in the chicken broth and bring it to a simmer.
- Stir in the heavy cream and the Boursin cheese, mixing until you have a smooth sauce. Let it simmer for a few minutes to thicken slightly.
- Return the cooked chicken and pasta to the skillet, stirring to combine everything evenly.
- Before serving, garnish with freshly chopped parsley.
