- 4 eggs
- 1 lb beef sausage
- 1/2 cup milk
- 2 tbsp flour
- 2 tbsp butter
- Salt to taste
- Pepper to taste
- 1/2 cup cheese (optional)
Instructions
- Preheat your oven and bake tater tots according to package instructions until crispy.
- In a skillet over medium heat, cook the beef sausage until golden brown and fragrant.
- Remove the sausage and set aside. In the same skillet, melt butter and whisk in flour for 1-2 minutes.
- Gradually add milk, whisking to prevent lumps, and cook until thickened. Season with salt and pepper.
- Scramble the eggs in a separate pan until light and fluffy.
- Assemble the bowl: layer crispy tater tots, top with sausages and scrambled eggs, then pour gravy over everything.
- If desired, sprinkle cheese on top before serving.
Notes
Add fresh herbs for better flavor, and feel free to use turkey sausage for a lighter option.
