- 2 cups cooked shredded chicken
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 can (10 oz) enchilada sauce
- 8 small flour or corn tortillas
- 1/2 cup diced onions (optional)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Chopped fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the cooked shredded chicken, 1 cup of cheese, diced onions (if using), garlic powder, cumin, salt, and pepper.
- Spoon approximately 1/4 cup of the chicken mixture into each tortilla. Roll them up and place them seam-side down in a greased baking dish.
- Pour the enchilada sauce over the top, ensuring all tortillas are covered.
- Sprinkle the remaining cheese on top of the sauce.
- Bake for 20-25 minutes until the cheese is bubbly and golden.
- Optional: Garnish with fresh cilantro before serving hot.
