Description

Ingredients

  • 3 1/2 cups unbleached all-purpose flour
  • 3/4 teaspoon kosher salt
  • 3/4 teaspoon baking soda
  • 1 1/2 cups buttermilk
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon sugar (optional)
  • 1/2 cup currants or raisins (optional)

Instructions

  1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, salt, baking soda, and optional sugar.
  3. Create a well in the center of the dry ingredients and gradually pour in the buttermilk and melted butter.
  4. Gently stir the mixture until a shaggy dough forms.
  5. Pour the dough onto a lightly floured surface and knead gently about four times.
  6. Shape the dough into a round loaf and transfer to the prepared baking sheet.
  7. Dust the top with flour and make a large X slash on top of the dough.
  8. Bake for 15 minutes at 450°F, then lower the temperature to 400°F (200°C), rotate the pan, and continue baking for another 25-30 minutes.
  9. Allow the bread to cool for at least 20 minutes before slicing and serving warm.

Notes

Best enjoyed with butter or honey. Store leftovers at room temperature for up to 2-3 days or freeze for up to 3 months.
