Ingredients

  • 1 tbsp light brown sugar (packed)
  • 2 cups + 2 tbsp all-purpose flour
  • 1 teaspoon baking powder

  • 1 teaspoon clear vanilla extract
  • ⅔ cup diced fresh strawberries
  • 1 teaspoon lemon juice
  • 12 tbsp unsalted butter (room temperature)
  • 1 cup light brown sugar (packed)
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • ½ cup shortcake crumbs (for topping)

Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a medium bowl, whisk together ¼ cup granulated sugar, light brown sugar, 6 tbsp flour, and ½ teaspoon baking powder. Stir in the oil and clear vanilla extract until crumbly.
  3. Spread the crumble mixture on a parchment-lined baking tray and bake for 15-18 minutes until golden brown. Cool completely.
  4. Toss diced strawberries with lemon juice and let sit.
  5. In a mixing bowl, beat softened butter with 1 cup light brown sugar and ¼ cup granulated sugar on medium speed for 3 minutes until fluffy.
  6. Add in egg, egg yolk, and 1 teaspoon vanilla extract; mix until combined.
  7. Gradually mix in remaining flour, baking powder, baking soda, and salt until nearly combined.
  8. Gently fold in ½ cup shortcake crumbs and diced strawberries.
  9. Scoop dough onto a parchment-lined baking sheet, leaving space between each scoop. Press additional shortcake crumbs on top.
  10. Chill the tray in the freezer for at least 2-3 hours.
  11. Preheat oven to 350°F (180°C).
  12. Bake chilled cookies for 9-11 minutes for standard size, or 12-14 minutes for larger cookies.
  13. Optional: Press more shortcake crumbs and diced strawberries on top after baking.
  14. Cool cookies on a wire rack for at least 15 minutes before serving.

Notes

For best results, chill the dough longer for thicker cookies. Use fresh strawberries for optimal flavor.
