- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- A pinch of salt
- 3/4 cup (1 1/2 sticks) chilled butter, cubed
- 2 large eggs
- 1 cup granulated sugar
- 1/2 cup sour cream
- 1/3 cup all-purpose flour
- A pinch of salt
- 3 cups fresh diced strawberries
Instructions
- Preheat your oven to 350°F and grease a 7×11-inch (2 quart) glass baking dish.
- In a large bowl, mix together the flour, sugar, and salt. Use a dough blender to incorporate the cubed butter until the mixture becomes crumbly.
- Set aside 3/4 cup of this crumbly mixture for the topping. Press the remaining crust mixture evenly into the bottom of the greased baking dish.
- Bake the crust for 15 minutes, then remove from the oven and set aside to cool.
- In another bowl, whisk the eggs together. Add the sugar, sour cream, additional flour, and salt, mixing until fully combined.
- Gently stir in the diced strawberries, then spoon this delicious filling over the pre-baked crust.
- Take the reserved crust mixture and sprinkle it evenly over the strawberry filling.
- Place the dish back in the oven and bake for 45-55 minutes, or until the top is lightly browned and the filling is set.
- Allow the bars to cool for an hour before cutting and serving.
Notes
Choose ripe, sweet strawberries for the best flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 4-5 days.
