A delightful dessert combining strawberry cake mix with a creamy cheesecake swirl and a fresh strawberry glaze, perfect for any occasion.


Ingredients

  • 1 box strawberry cake mix (plus oil, eggs, and water as required)
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, mashed
  • 1/3 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with 1 tbsp water
  • Fresh strawberries for garnish
  • Drizzle of white chocolate (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, prepare the cake batter according to the package instructions.
  3. Pour the cake batter into a greased baking dish.
  4. In another bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  5. Drop spoonfuls of the cream cheese mixture onto the cake batter.
  6. Use a knife to gently swirl the cream cheese into the batter.
  7. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  8. While the cake bakes, prepare the strawberry glaze by combining mashed strawberries, granulated sugar, and lemon juice in a saucepan, cooking over medium heat until sugar dissolves.
  9. Stir in the cornstarch mixture and simmer until thickened.
  10. Once the cake cools slightly, drizzle it with the strawberry glaze and garnish with fresh strawberries and a drizzle of white chocolate, if desired.

Notes

Store leftovers in an airtight container for up to a week or freeze individual slices wrapped in foil.
