A delightful dessert combining strawberry cake mix with a creamy cheesecake swirl and a fresh strawberry glaze, perfect for any occasion.

- 1 box strawberry cake mix (plus oil, eggs, and water as required)
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup fresh strawberries, mashed
- 1/3 cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch mixed with 1 tbsp water
- Fresh strawberries for garnish
- Drizzle of white chocolate (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, prepare the cake batter according to the package instructions.
- Pour the cake batter into a greased baking dish.
- In another bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Drop spoonfuls of the cream cheese mixture onto the cake batter.
- Use a knife to gently swirl the cream cheese into the batter.
- Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake bakes, prepare the strawberry glaze by combining mashed strawberries, granulated sugar, and lemon juice in a saucepan, cooking over medium heat until sugar dissolves.
- Stir in the cornstarch mixture and simmer until thickened.
- Once the cake cools slightly, drizzle it with the strawberry glaze and garnish with fresh strawberries and a drizzle of white chocolate, if desired.
Notes
Store leftovers in an airtight container for up to a week or freeze individual slices wrapped in foil.
