- ½ cup fresh strawberries, chopped small (80g)
- ½ cup unsalted butter, melted (113g)
- 1 cup granulated sugar (200g)
- ¼ teaspoon kosher salt
- 1 large egg, room temperature
- 1 teaspoon pure vanilla extract
- 1 ¼ cup all-purpose flour (157g)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- Prepare the strawberries: Wash, hull, and chop them into small pieces. Place them in a single layer on two layers of paper towels; cover with another paper towel and gently press to remove excess moisture.
- In a medium to large bowl, whisk together the melted butter, granulated sugar, and kosher salt until combined.
- Add the egg and vanilla extract to the mixture and whisk everything together for about a minute, scraping down sides as needed.
- Add the flour and mix until you see some large streaks. Gently fold in the chopped strawberries.
- Drop the thick batter into the prepared baking pan and smooth it out to create an even layer.
- Bake for 25-30 minutes, until the edges are lightly browned and a tester in the center comes out with a few moist crumbs.
- Allow the blondies to cool in the pan on a wire rack, then use the parchment to lift them out and cut them into pieces.
Notes
These blondies can be served with vanilla ice cream or whipped cream for an indulgent dessert. Store in an airtight container at room temperature for up to 3 days.
