Fluffy pancakes inspired by the classic churro, sprinkled with cinnamon sugar for a delightful twist on breakfast.
Ingredients

- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/2 cup cinnamon sugar (for topping)
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until well blended.
- In a separate bowl, mix together the milk, egg, melted butter, and vanilla extract until combined.
- Pour the wet mixture into the dry ingredients. Stir gently until just combined; the batter may be lumpy, which is fine.
- Heat a non-stick skillet over medium heat and lightly grease it.
- For each pancake, pour 1/4 cup of batter onto the skillet.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Once removed from the skillet, immediately sprinkle the pancakes with cinnamon sugar while they’re still warm.
- Repeat with the remaining batter. Serve warm and enjoy!
Notes
Top with warm maple syrup, extra cinnamon sugar, whipped cream, or fresh fruit. Store leftovers in an airtight container in the fridge for up to three days, or freeze for two months.
