Ingredients

  • 1 lb Boneless Chicken Breasts or Thighs
  • 2 cups Corn (fresh grilled, frozen, or canned)
  • 4 oz Cream Cheese
  • 1/3 cup Cotija Cheese (or Feta)
  • 1 Lime (juiced)
  • 2 cloves Garlic (minced)
  • 1/2 tsp Chili Powder
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Onion Powder
  • Fresh Cilantro (optional for garnish)

Instructions

  1. Lightly grease your slow cooker with oil or cooking spray.
  2. Place the boneless chicken in the bottom of the slow cooker.
  3. Spread the corn evenly over the chicken.
  4. In a bowl, blend together cream cheese, garlic, chili powder, smoked paprika, and onion powder.
  5. Spread the mixture over the chicken and corn.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is tender.
  7. Shred the chicken in the slow cooker, mixing it into the creamy sauce. Add lime juice and sprinkle cotija (or feta) cheese over the top.
  8. Garnish with fresh cilantro if desired.

Notes

Great to enjoy on its own or spooned over rice or polenta. Can be garnished with avocado slices or sour cream.
