- 1 lb Boneless Chicken Breasts or Thighs
- 2 cups Corn (fresh grilled, frozen, or canned)
- 4 oz Cream Cheese
- 1/3 cup Cotija Cheese (or Feta)
- 1 Lime (juiced)
- 2 cloves Garlic (minced)
- 1/2 tsp Chili Powder
- 1/2 tsp Smoked Paprika
- 1/2 tsp Onion Powder
- Fresh Cilantro (optional for garnish)
Instructions
- Lightly grease your slow cooker with oil or cooking spray.
- Place the boneless chicken in the bottom of the slow cooker.
- Spread the corn evenly over the chicken.
- In a bowl, blend together cream cheese, garlic, chili powder, smoked paprika, and onion powder.
- Spread the mixture over the chicken and corn.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is tender.
- Shred the chicken in the slow cooker, mixing it into the creamy sauce. Add lime juice and sprinkle cotija (or feta) cheese over the top.
- Garnish with fresh cilantro if desired.
Notes
Great to enjoy on its own or spooned over rice or polenta. Can be garnished with avocado slices or sour cream.
