Description
A heartwarming chicken stew made in a slow cooker, combining tender chicken, hearty vegetables, and delicious flavors for a cozy meal.
Ingredients
Scale
- 2 pounds boneless, skinless chicken thighs or breasts
- 3 carrots, diced
- 3 celery stalks, diced
- 1 onion, diced
- 4 medium potatoes, peeled and cubed
- 4 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper, to taste
- 1/4 cup all-purpose flour (optional, for thickening)
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Start by heating a skillet over medium-high heat. Sear the chicken until it turns golden brown on both sides, about 5-7 minutes.
- In your slow cooker, add the seared chicken along with diced vegetables, potatoes, minced garlic, and bay leaves.
- Sprinkle the thyme, salt, and pepper over the ingredients and stir to distribute flavors evenly.
- Pour in your chicken broth. For a heartier stew, whisk the flour with a little broth before adding it, or sprinkle it directly and stir in.
- Cover and cook on low for 6–8 hours or on high for 3–4 hours until the chicken and veggies are tender.
- Before serving, remove the bay leaves, taste the stew, and adjust the seasoning. Garnish with fresh parsley.
Notes
Sear the chicken for added flavor and don’t skip the fresh herbs for brightness.
