- 2 Chicken breasts
- 2 Bell peppers (your color choice)
- 1 Onion
- 2 cloves Garlic
- 2 tbsp Olive oil
- 1 tsp Paprika
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken breasts with salt, pepper, and paprika.
- Add chicken to the skillet and cook for 6-7 minutes on each side until golden and cooked through.
- Remove the chicken and set aside.
- In the same skillet, add chopped onions and bell peppers. Cook until tender.
- Add minced garlic and cook for an additional minute until fragrant.
- Return chicken to the skillet, mixing everything together for 2-3 minutes to meld flavors.
- Taste and adjust seasoning if necessary.
Notes
Feel free to use leftover cooked chicken to cut down on prep time. This dish is versatile and can be served over rice, quinoa, or in lettuce wraps.
