Ingredients

- 1 lb breakfast sausage
- 8 tortillas (flour or corn)
- 6 eggs
- 1 cup milk
- 2 cups cheese (cheddar or your favorite)
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the breakfast sausage over medium heat until browned. Drain any excess grease.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- In a greased 9×13 inch baking dish, layer the tortillas.
- Add half of the cooked sausage on top of the tortillas.
- Pour half of the egg mixture over the sausage, then sprinkle with cheese.
- Repeat the layers with the remaining tortillas, sausage, egg mixture, and top with any leftover cheese.
- Bake in the preheated oven for about 30-35 minutes or until golden and cooked through.
Notes
Feel free to substitute turkey sausage for a healthier option or use dairy-free cheese for lactose-free version. Store leftovers in an airtight container for up to three days.
