- 1 lb sausage
- 1 package (30 oz) frozen hash browns
- 2 cups shredded cheddar cheese
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 12 large eggs
- 1 cup milk
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the sausage over medium heat until browned, then drain excess fat.
- Grease a 9×13 inch baking dish and layer the hash browns at the bottom, followed by the sausage, onion, and bell pepper.
- In a bowl, whisk together the eggs, milk, salt, and pepper, then pour over the hash brown mixture.
- Sprinkle cheddar cheese on top.
- Bake for 45-50 minutes, or until the eggs are set and the top is golden.
- Allow to cool for a few minutes before serving.
Notes
Store leftovers in an airtight container in the fridge for up to four days. Can be frozen for longer storage.
