Delightful cookies that combine the rich flavors of cheesecake, caramel, and soft cookies for a perfect sweet treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup salted caramel sauce
  • Sea salt flakes for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients and mix until combined.
  5. In another bowl, beat the cream cheese with the powdered sugar until smooth.
  6. Take a small portion of the cookie dough and flatten it in your hand. Add a spoonful of the cream cheese mixture to the center and wrap the dough around it, forming a ball.
  7. Place the cookie balls on the prepared baking sheet and bake for 12-15 minutes, or until golden on the edges.
  8. Once out of the oven, drizzle the salted caramel sauce over the warm cookies and sprinkle with sea salt flakes.
  9. Allow to cool slightly before serving.

Notes

Best served warm with a scoop of vanilla ice cream. Store in an airtight container for 3-4 days at room temperature, or refrigerate for up to a week.
