Instructions
- Preheat your oven to 375°F (190°C) and grease a mini muffin tin thoroughly.
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In a separate bowl, combine the buttermilk, egg, melted butter, and vanilla extract, mixing well.
- Pour the wet ingredients into the dry mixture and stir gently until just combined. Avoid overmixing! If desired, fold in chocolate chips or your favorite fruits.
- Fill each muffin cup about 2/3 full with the batter; this allows room for them to rise.
- Bake for 10-12 minutes or until a toothpick inserted into the center comes out clean.
