Ingredients

- 1 lb Chicken breast, cubed
- 8 oz Pasta (penne or rotini)
- 1–2 Bell peppers, sliced
- 1 Onion, sliced (yellow or red)
- 2 tbsp Fajita seasoning
- 2 cloves Garlic, minced
- 1 cup Cream (heavy or light)
- Salt, to taste
- Pepper, to taste
Instructions
- Cook the pasta according to the package instructions until it’s al dente. Drain and set aside.
- In a large pot or skillet, heat some oil over medium-high heat.
- Add the cubed chicken breast and sear until golden brown.
- Stir in sliced bell peppers, onion, fajita seasoning, and minced garlic. Cook until the vegetables are tender.
- Pour in the cream and stir, scraping up any browned bits from the bottom of the pot.
- Add the drained pasta back into the pot and mix until everything is well-coated. Allow it to simmer for a few moments.
Notes
For extra flavor, marinate the chicken in fajita seasoning a few hours prior to cooking. Use pre-cut vegetables for a quicker prep.
