Ingredients

  • 1 lb Chicken breast, cubed
  • 8 oz Pasta (penne or rotini)
  • 12 Bell peppers, sliced
  • 1 Onion, sliced (yellow or red)
  • 2 tbsp Fajita seasoning
  • 2 cloves Garlic, minced
  • 1 cup Cream (heavy or light)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook the pasta according to the package instructions until it’s al dente. Drain and set aside.
  2. In a large pot or skillet, heat some oil over medium-high heat.
  3. Add the cubed chicken breast and sear until golden brown.
  4. Stir in sliced bell peppers, onion, fajita seasoning, and minced garlic. Cook until the vegetables are tender.
  5. Pour in the cream and stir, scraping up any browned bits from the bottom of the pot.
  6. Add the drained pasta back into the pot and mix until everything is well-coated. Allow it to simmer for a few moments.

Notes

For extra flavor, marinate the chicken in fajita seasoning a few hours prior to cooking. Use pre-cut vegetables for a quicker prep.
