Description

Fluffy and delicious old-fashioned pancakes perfect for family brunches or spontaneous cravings.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter plus more for cooking
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, combine the milk, egg, melted butter, and optional vanilla extract. Mix well.
  3. Pour the wet ingredients into the dry ingredients, folding gently until just combined. Be careful not to overmix; a few lumps are okay!
  4. Preheat a griddle over medium heat and grease it with a little extra butter.
  5. Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  6. Serve warm with your favorite toppings.

Notes

Pancakes are best served immediately off the griddle. Experiment with toppings for variety.
