Ingredients

- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter plus more for cooking
- 1 teaspoon vanilla extract (optional)
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, egg, melted butter, and optional vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients, folding gently until just combined. Be careful not to overmix; a few lumps are okay!
- Preheat a griddle over medium heat and grease it with a little extra butter.
- Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Serve warm with your favorite toppings.
Notes
Pancakes are best served immediately off the griddle. Experiment with toppings for variety.
