Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter (softened)
  • 1 cup sugar
  • 1 large egg
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 58 drops yellow food coloring (optional)
  • 1/4 cup sugar (for rolling)
  • 3/4 cup powdered sugar (for rolling)

Instructions

  1. In a large bowl, mix together the flour, salt, and baking soda. Set aside.
  2. In the bowl of your stand mixer, beat the softened butter and sugar until fluffy.
  3. Add the egg, lemon juice, lemon zest, vanilla extract, and food coloring (if using) to the mixing bowl and mix until combined.
  4. Slowly add the dry ingredients to the stand mixer and mix until everything is incorporated. Cover the bowl and refrigerate for 2 hours.
  5. Preheat your oven to 350°F and line baking sheets with parchment paper.
  6. Scoop out the dough using a cookie scoop, roll into balls, and coat with both regular sugar and powdered sugar.
  7. Place dough balls on the prepared baking sheets, 2 inches apart.
  8. Bake for 10-12 minutes, then cool on the baking sheet for 5 minutes before transferring to a cooling rack.
