Ingredients

- 1 pound of sausage (any variety)
- 4 cups of diced potatoes
- 1 onion, chopped
- 3 cloves of garlic, minced
- 4 cups of chicken broth
- 1 cup of heavy cream
- Salt and pepper to taste
- Optional: Diced carrots, celery, and green onions for garnish
Instructions
- In a large pot over medium heat, brown the sausage until it’s nice and crispy.
- Add the chopped onion and minced garlic. Cook until the onion turns translucent, about 3-5 minutes.
- Stir in the diced potatoes. If desired, add diced carrots and celery for extra flavor.
- Add the chicken broth and bring the mixture to a boil.
- Reduce the heat and let it simmer until the potatoes are tender, approximately 20 minutes.
- Stir in the heavy cream, followed by seasoning with salt and pepper as necessary.
- Dish it out hot, garnished with chopped green onions if you like!
Notes
This soup pairs beautifully with crusty bread or a simple side salad. It can be stored in the refrigerator for up to three days or frozen for up to three months.
