Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup spinach or kale
- Juice of 1 lemon
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, and sauté until translucent.
- Stir in the carrots and celery, and cook for about 5 minutes until slightly softened.
- Pour in the vegetable broth, add oregano, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add spinach or kale and simmer for another 5 minutes.
- Stir in the lemon juice before serving.
Notes
Can be customized with different vegetables or protein additions like beans or lentils.
