Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup spinach or kale
  • Juice of 1 lemon

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, and sauté until translucent.
  3. Stir in the carrots and celery, and cook for about 5 minutes until slightly softened.
  4. Pour in the vegetable broth, add oregano, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add spinach or kale and simmer for another 5 minutes.
  7. Stir in the lemon juice before serving.

Notes

Can be customized with different vegetables or protein additions like beans or lentils.
