Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the cottage cheese, olive oil, and egg (or flaxseed mixture). Mix until smooth.
- In another bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until a sticky dough forms.
- Fold in the chopped spinach and shredded mozzarella cheese, ensuring everything is well combined.
- Divide the dough into 8 equal pieces and shape them into bagel-like forms, creating a hole in the center of each.
- Place the bagels on your prepared baking sheet. If desired, sprinkle with black sesame seeds and fresh herbs.
