Instructions
- Preheat your oven to 375°F (190°C).
- Boil the chopped potatoes in salted water until tender, about 15 minutes. Drain and return them to the pot.
- Add butter and milk; season with salt and pepper. Mash until smooth and creamy.
- Mix in shredded cheese, fresh herbs, onion, garlic, thyme, and paprika until combined.
- Roll out your pie crust and place it in your pie dish. Pour the creamy potato mixture into the crust, smoothing it out evenly.
- Brush the edges of the crust with the beaten egg for a golden finish.
