Description

A simple and comforting Irish potato flatbread that’s crispy on the outside and soft on the inside, perfect for breakfast or brunch.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons butter, melted
  • Additional butter or oil for frying

Instructions

  1. In a large mixing bowl, combine the mashed potatoes, flour, baking powder, and salt. Mix until a soft dough forms.
  2. Divide the dough into two equal parts and shape each into a round disk, roughly 1/2 inch thick.
  3. Lightly dust a clean surface with flour. Place the disks on it and cut each disk into quarters, forming triangles.
  4. Heat a skillet over medium heat and add a tablespoon of butter or oil. Once hot, carefully place the farls in the skillet.
  5. Cook for about 3-4 minutes on each side until golden brown and crispy.
  6. Serve warm, ideally alongside eggs, crispy bacon, or a dollop of butter.

Notes

For a stronger flavor, try adding herbs like chives or parsley to the dough. Leftover mashed potatoes work wonderfully, and you can freeze the uncooked dough for up to a month.
