Description
A simple and comforting Irish potato flatbread that’s crispy on the outside and soft on the inside, perfect for breakfast or brunch.
Ingredients

- 2 cups mashed potatoes
- 1 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons butter, melted
- Additional butter or oil for frying
Instructions
- In a large mixing bowl, combine the mashed potatoes, flour, baking powder, and salt. Mix until a soft dough forms.
- Divide the dough into two equal parts and shape each into a round disk, roughly 1/2 inch thick.
- Lightly dust a clean surface with flour. Place the disks on it and cut each disk into quarters, forming triangles.
- Heat a skillet over medium heat and add a tablespoon of butter or oil. Once hot, carefully place the farls in the skillet.
- Cook for about 3-4 minutes on each side until golden brown and crispy.
- Serve warm, ideally alongside eggs, crispy bacon, or a dollop of butter.
Notes
For a stronger flavor, try adding herbs like chives or parsley to the dough. Leftover mashed potatoes work wonderfully, and you can freeze the uncooked dough for up to a month.
