- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, cold and cubed
- 3/4 cup buttermilk
- 4 chicken thighs, boneless and skinless
- 1 cup buttermilk (for marinade)
- 1 cup flour (for coating)
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- Vegetable oil (for frying)
- 1/2 cup hot honey (or honey mixed with hot sauce)
- Optional: Fresh herbs for garnish
Instructions
- Marinate the chicken thighs in 1 cup of buttermilk for at least 1 hour or overnight.
- Preheat the oven to 450°F (230°C).
- Mix 2 cups of flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt in a mixing bowl. Cut in 1/4 cup of cold, cubed butter until the mixture resembles coarse crumbs.
- Stir in 3/4 cup of buttermilk until just combined.
- Turn the dough onto a floured surface. Fold it a few times, then roll or pat it to about 1-inch thickness. Use a round cutter to cut out biscuits.
- Place the biscuits on a baking sheet and bake for 10-12 minutes until golden brown.
- In a skillet, heat vegetable oil over medium heat.
- In a separate bowl, combine 1 cup of flour with paprika, cayenne pepper, salt, and pepper.
- Dredge each marinated chicken thigh in the seasoned flour mix. Fry the chicken in the hot oil for about 5-7 minutes on each side until golden brown and cooked through.
- Drizzle hot honey over the fried chicken while it’s still hot.
- Serve the crispy chicken on the warm biscuits and garnish with fresh herbs if desired.
Notes
Feel free to substitute buttermilk with yogurt and use gluten-free flour for a gluten-free version. For added flavor, mix fresh herbs into the biscuit dough.
