Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk
  • 4 chicken thighs, boneless and skinless
  • 1 cup buttermilk (for marinade)
  • 1 cup flour (for coating)
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Vegetable oil (for frying)
  • 1/2 cup hot honey (or honey mixed with hot sauce)
  • Optional: Fresh herbs for garnish

Instructions

  1. Marinate the chicken thighs in 1 cup of buttermilk for at least 1 hour or overnight.
  2. Preheat the oven to 450°F (230°C).
  3. Mix 2 cups of flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt in a mixing bowl. Cut in 1/4 cup of cold, cubed butter until the mixture resembles coarse crumbs.
  4. Stir in 3/4 cup of buttermilk until just combined.
  5. Turn the dough onto a floured surface. Fold it a few times, then roll or pat it to about 1-inch thickness. Use a round cutter to cut out biscuits.
  6. Place the biscuits on a baking sheet and bake for 10-12 minutes until golden brown.
  7. In a skillet, heat vegetable oil over medium heat.
  8. In a separate bowl, combine 1 cup of flour with paprika, cayenne pepper, salt, and pepper.
  9. Dredge each marinated chicken thigh in the seasoned flour mix. Fry the chicken in the hot oil for about 5-7 minutes on each side until golden brown and cooked through.
  10. Drizzle hot honey over the fried chicken while it’s still hot.
  11. Serve the crispy chicken on the warm biscuits and garnish with fresh herbs if desired.

Notes

Feel free to substitute buttermilk with yogurt and use gluten-free flour for a gluten-free version. For added flavor, mix fresh herbs into the biscuit dough.
