- 4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon salt
- 1 packet active dry yeast
- 1 cup whole milk, lukewarm
- 1/2 cup unsalted butter, softened
- 1 1/2 cups unsalted butter, chilled and cold
Instructions
- In a bowl, combine lukewarm milk, sugar, and yeast. Allow it to sit until frothy, about 5-10 minutes.
- In a large mixing bowl, combine flour and salt. Add the frothy yeast mixture along with the softened butter. Mix until a dough forms.
- Knead the dough on a floured surface until smooth and elastic. Let it rise in a warm place for 1-2 hours until doubled in size.
- Roll the dough into a large rectangle and place the chilled butter in the center. Fold the dough over and seal the edges. Roll out gently to create layers, repeating this for maximum flakiness.
- Cut the dough into triangles and roll each triangle from the wide end to the point to shape the croissants.
- Allow the shaped croissants to rise for another hour until puffy.
- Preheat the oven to 400°F (200°C) and bake the croissants for 15-20 minutes until golden brown.
Notes
Be patient with the rising times for better flavor and ensure your butter is cold to create flaky layers.
