Ingredients

  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon salt
  • 1 packet active dry yeast
  • 1 cup whole milk, lukewarm
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups unsalted butter, chilled and cold

Instructions

  1. In a bowl, combine lukewarm milk, sugar, and yeast. Allow it to sit until frothy, about 5-10 minutes.
  2. In a large mixing bowl, combine flour and salt. Add the frothy yeast mixture along with the softened butter. Mix until a dough forms.
  3. Knead the dough on a floured surface until smooth and elastic. Let it rise in a warm place for 1-2 hours until doubled in size.
  4. Roll the dough into a large rectangle and place the chilled butter in the center. Fold the dough over and seal the edges. Roll out gently to create layers, repeating this for maximum flakiness.
  5. Cut the dough into triangles and roll each triangle from the wide end to the point to shape the croissants.
  6. Allow the shaped croissants to rise for another hour until puffy.
  7. Preheat the oven to 400°F (200°C) and bake the croissants for 15-20 minutes until golden brown.

Be patient with the rising times for better flavor and ensure your butter is cold to create flaky layers.
