- 1.5 lbs beef (cubed)
- 4 medium potatoes (diced)
- 4 cloves garlic (minced)
- 1/2 cup butter
- 1 cup beef broth
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- In a slow cooker, combine the cubed beef and diced potatoes.
- In a saucepan, melt the butter over medium heat. Sauté the minced garlic until fragrant.
- Pour the garlic butter mixture over the beef and potatoes.
- Add the beef broth, and season with salt and pepper. Stir well to combine.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender.
- Serve warm, garnished with fresh parsley.
Notes
Searing the beef before adding to the slow cooker can enhance flavor. Feel free to add extra herbs for depth.
