- 1 pound ground turkey or chicken
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 2 teaspoons dried oregano
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Lasagna noodles, broken into pieces
- Fresh basil, for garnish
Instructions
- In a large pot, brown the ground turkey or chicken over medium heat. Add the onion and garlic, cooking until softened.
- Stir in the crushed tomatoes, broth, oregano, Italian seasoning, salt, and pepper. Bring to a simmer.
- Add the broken lasagna noodles and cook until tender, about 10 minutes.
- Stir in the ricotta cheese and half of the mozzarella cheese.
- Serve hot, garnished with the remaining mozzarella and fresh basil.
Notes
For extra flavor, try adding crushed red pepper flakes for some heat. To make it creamier, you can mix in more ricotta or add a splash of cream just before serving.
