Ingredients

  • 2 chicken breasts
  • 1 cup brown rice
  • 2 cups mixed vegetables (fresh or frozen)
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 3 cups chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the brown rice, mixed vegetables, garlic, and seasonings.
  3. Pour in the chicken broth and stir until well combined.
  4. Transfer the rice and vegetable mixture to a baking dish and spread it evenly.
  5. Place the chicken breasts on top of the rice mixture, seasoning them on both sides with salt and pepper.
