- 2 chicken breasts
- 1 cup brown rice
- 2 cups mixed vegetables (fresh or frozen)
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 3 cups chicken broth
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the brown rice, mixed vegetables, garlic, and seasonings.
- Pour in the chicken broth and stir until well combined.
- Transfer the rice and vegetable mixture to a baking dish and spread it evenly.
- Place the chicken breasts on top of the rice mixture, seasoning them on both sides with salt and pepper.
- Drizzle olive oil over the chicken.
- Cover the dish with aluminum foil and bake for about 45-50 minutes, or until the chicken is cooked and the rice is tender.
- Remove the foil for the last 10 minutes to allow the chicken to brown slightly.
Notes
Use low-sodium chicken broth for a healthier option and consider marinating the chicken for added flavor. Substitute quinoa for rice or replace chicken with chickpeas for a vegetarian option.
