Description

  • 1 cup Guinness stout
  • 1 large onion, chopped
  • 2 large carrots, diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 package puff pastry (two sheets)
  • 1 egg, beaten (for egg wash)
  • Optional: 1 tablespoon olive oil (for sautéing)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Sauté the chopped onion, minced garlic, and diced carrots until softened, about 5-7 minutes.
  3. Add in your minced beef, breaking it apart with a spoon as it cooks until browned, roughly 8-10 minutes.
  4. Stir in the tomato paste, Worcestershire sauce, and Guinness stout. Sprinkle in the thyme, season with salt and pepper, and let it all simmer for 15-20 minutes.
  5. Roll out the puff pastry on a lightly floured surface and position one sheet in a pie dish, leaving a bit of overhang around the edges.
  6. Pour the beef mixture into the lined pastry, ensuring it spreads evenly.
  7. Cover with the second sheet of pastry, crimp the edges with a fork to seal tight, and make a few slits on top for steam to escape.
  8. Brush the top with the beaten egg for a golden finish.
  9. Bake the pie for 25-30 minutes or until golden and puffed.
  10. Allow it to cool slightly before serving, garnished with fresh parsley if desired.
