- 1 cup Guinness stout
- 1 large onion, chopped
- 2 large carrots, diced
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1 package puff pastry (two sheets)
- 1 egg, beaten (for egg wash)
- Optional: 1 tablespoon olive oil (for sautéing)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat a tablespoon of olive oil over medium heat. Sauté the chopped onion, minced garlic, and diced carrots until softened, about 5-7 minutes.
- Add in your minced beef, breaking it apart with a spoon as it cooks until browned, roughly 8-10 minutes.
- Stir in the tomato paste, Worcestershire sauce, and Guinness stout. Sprinkle in the thyme, season with salt and pepper, and let it all simmer for 15-20 minutes.
- Roll out the puff pastry on a lightly floured surface and position one sheet in a pie dish, leaving a bit of overhang around the edges.
- Pour the beef mixture into the lined pastry, ensuring it spreads evenly.
- Cover with the second sheet of pastry, crimp the edges with a fork to seal tight, and make a few slits on top for steam to escape.
- Brush the top with the beaten egg for a golden finish.
- Bake the pie for 25-30 minutes or until golden and puffed.
- Allow it to cool slightly before serving, garnished with fresh parsley if desired.

Consider adding a side of creamy mashed potatoes or a salad for a complete meal. Leftovers can be stored for up to three days in an airtight container.
