Description

These Ground Beef Enchiladas are a comforting and delicious meal, perfect for weeknight dinners and family gatherings.

Ingredients

Scale
  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef along with the diced onions until they become translucent, about 5-7 minutes.
  3. Add the minced garlic along with the cumin and chili powder. Sauté for an additional minute.
  4. Spoon the beef mixture onto each tortilla, roll them tightly, and place them seam-side down in a greased baking dish.
  5. Pour your enchilada sauce over the rolled tortillas and sprinkle the shredded cheese on top.
  6. Bake uncovered for 20-25 minutes until the enchiladas are bubbling and golden.

Notes

Consider making your own enchilada sauce for enhanced flavor. Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months before baking.
