A melt-in-your-mouth slow cooker pot roast that’s budget-friendly and perfect for family dinners.


Ingredients

  • 34 lb chuck roast
  • 1 tbsp olive oil
  • 1 onion, sliced
  • 4 carrots, cut into chunks
  • 4 gold potatoes, quartered
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Season the chuck roast generously with salt and pepper on all sides.
  2. In a hot skillet, sear the roast for 2–3 minutes on each side until browned.
  3. Place the sliced onion, carrots, and quartered potatoes into the slow cooker.
  4. Add minced garlic, thyme, bay leaf, and Worcestershire sauce over the veggies.
  5. Carefully place the seared roast on top of the vegetables.
  6. Pour the beef broth around the sides.
  7. Cover and cook on low for 8 hours or on high for 4–5 hours.
  8. Before serving, remove the bay leaf. Let the roast rest for 10 minutes before slicing.

Notes

Consider adding red wine to the broth or using different herbs for added flavor.
