A delightful Cowboy Butter Chicken Linguine that combines tender chicken and linguine in a creamy garlic and butter sauce, perfect for weeknight dinners.

- 1 pound boneless, skinless chicken breasts
- 12 ounces linguine pasta
- 2 tablespoons olive oil
- 3 tablespoons butter
- 4 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 teaspoon paprika
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1/4 cup fresh parsley, chopped
- 1/2 cup chicken broth or reserved pasta water
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- Salt and black pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Toss in the linguine and cook according to package directions. Remember to reserve ½ cup of the pasta water before draining and set the pasta aside.
- In a large skillet, heat the olive oil over medium-high heat. Season the chicken with salt and pepper. Cook the chicken pieces for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and cover to keep warm.
- In the same skillet, melt the butter. Add minced garlic, paprika, and red pepper flakes. Sauté for about 1 minute until fragrant.
- Stir in the Dijon mustard, lemon juice, lemon zest, and chicken broth (or reserved pasta water). Gently simmer and scrape any browned bits from the bottom of the pan.
- Pour in the heavy cream and half of the chopped parsley. Stir gently for about 2 minutes until the sauce slightly thickens.
- Add the cooked chicken and linguine to the sauce, sprinkle in the parmesan cheese, and toss everything together until well coated. Adjust the sauce’s consistency with reserved pasta water if needed.
- Taste and adjust salt and pepper. Garnish with the remaining parsley and extra parmesan before serving hot.
Notes
Feel free to customize with your favorite pasta or substitute chicken with shrimp or tofu for a different twist. Pair with a salad or garlic bread.
