Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cottage cheese, eggs, shredded cheese, and diced vegetables. Mix well until fully incorporated.
- If desired, add garlic powder for extra flavor. Season with salt and pepper to taste.
- Grease a muffin tin with olive oil or non-stick spray.
- Pour the mixture evenly into each muffin cup, filling them about 3/4 full.
