Ingredients

- 1 lb chicken breast, sliced
- 2 cups mixed vegetables (fresh or frozen)
- 3 tbsp soy sauce
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp ginger, grated
- Salt, to taste
- Pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add sliced chicken breast and season with salt and pepper. Sauté until cooked through and golden brown, about 5-7 minutes.
- Toss in mixed vegetables, minced garlic, and grated ginger. Stir everything together.
- Pour soy sauce over and cook for an additional 3-5 minutes until veggies are tender but still crisp.
Notes
Great served over rice and garnished with sesame seeds or green onions. Leftovers can be stored in the refrigerator for up to 3 days.
