- 1 pound boneless, skinless chicken breasts
- 1 can (15 oz) white beans (drained and rinsed)
- 1 can (15 oz) corn (drained)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (4 oz) diced green chilies
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- Optional toppings: sour cream, shredded cheese, cilantro
Instructions
- Place the chicken breasts in the bottom of your crockpot.
- Layer the white beans, corn, onion, garlic, and diced green chilies on top of the chicken.
- Pour in the chicken broth and sprinkle in the cumin, oregano, salt, and pepper.
- Stir gently to combine all the ingredients without disturbing the chicken too much.
- Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
- Before serving, shred the chicken into the chili using two forks for that perfect texture.
- Serve hot, garnished with optional toppings like sour cream, shredded cheese, and freshly chopped cilantro.
Notes
For a creamier texture, add a splash of heavy cream or sour cream right before serving. You can also swap chicken for turkey or canned chickpeas for a vegetarian version.
