Ingredients

  • Shredded boneless skinless chicken breasts
  • Corn (canned or frozen)
  • Black beans (cooked or canned, rinsed and drained)
  • Diced tomatoes (with or without green chilies)
  • Cream cheese
  • Onion (diced)
  • Garlic (minced)
  • Chicken broth
  • Cumin
  • Chili powder
  • Salt and pepper

Instructions

  1. In your crockpot, combine the shredded chicken, corn, black beans, diced tomatoes, onion, garlic, and chicken broth.
  2. Add the cream cheese along with the cumin, chili powder, salt, and pepper.
  3. Stir everything together until well combined.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Just before serving, give the chili a good stir to incorporate the cream cheese fully.
