Ingredients
- Shredded boneless skinless chicken breasts
- Corn (canned or frozen)
- Black beans (cooked or canned, rinsed and drained)
- Diced tomatoes (with or without green chilies)
- Cream cheese
- Onion (diced)
- Garlic (minced)
- Chicken broth
- Cumin
- Chili powder
- Salt and pepper
Instructions
- In your crockpot, combine the shredded chicken, corn, black beans, diced tomatoes, onion, garlic, and chicken broth.
- Add the cream cheese along with the cumin, chili powder, salt, and pepper.
- Stir everything together until well combined.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Just before serving, give the chili a good stir to incorporate the cream cheese fully.
- Serve warm, garnished with fresh cilantro or avocado if desired.
