Ingredients

  • 2 large chicken breasts, sliced into cutlets
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1/3 cup sliced sun-dried tomatoes
  • 1 cup baby spinach
  • 1/2 tsp Italian seasoning

Instructions

  1. Season the chicken cutlets with salt and pepper.
  2. In a skillet, heat olive oil over medium heat and sear the chicken until it’s golden brown and cooked through. Remove the chicken and set aside.
  3. In the same skillet, add minced garlic and cook until fragrant.
  4. Pour in the chicken broth, heavy cream, and Parmesan cheese, stirring well. Let it simmer for a few minutes until the sauce thickens slightly.
  5. Add in the sun-dried tomatoes, baby spinach, and Italian seasoning. Mix until the spinach wilts.
  6. Return the chicken to the skillet, allowing it to warm in the sauce for a few additional minutes.
  7. Serve with your favorite pasta, rice, or crusty bread.

Notes

For a lighter option, substitute heavy cream with a lighter cream or half-and-half. Experiment by adding different vegetables or proteins.
