Ingredients

  • 2 Chicken breasts
  • 8 oz Pasta (fettuccine or penne)
  • 8 oz Fresh mushrooms (any type)
  • 2 cloves Garlic, minced
  • 1 cup Heavy cream
  • 2 tbsp Butter
  • 2 tbsp Olive oil
  • Salt and pepper, to taste

Instructions

  1. Cook the pasta according to the package instructions until al dente; drain and set aside.
  2. In a separate pan, heat olive oil over medium heat. Season the chicken with salt and pepper and sauté until golden, about 6-7 minutes per side.
  3. Add sliced mushrooms and minced garlic to the pan; cook for an additional 5-6 minutes until mushrooms are tender.
  4. Pour in the heavy cream, stirring to combine, and simmer until sauce thickens slightly.
  5. Mix in the cooked pasta, allowing the sauce to coat everything evenly. Adjust seasoning as needed.
  6. Serve hot, garnished with fresh herbs if desired.

For a dairy-free version, substitute heavy cream with coconut milk or a dairy-free cream alternative.
