Ingredients

  • 2 large chicken breasts
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 2 tbsp Dijon mustard
  • 3/4 cup heavy cream
  • 1 tsp honey
  • 1 tsp lemon juice
  • Chopped parsley for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Sear the chicken breasts for about 6-7 minutes on each side or until browned and cooked through.
  3. Remove the chicken and set aside. In the same skillet, add the minced garlic and cook for about a minute until fragrant.
  4. Pour in the chicken broth and Dijon mustard, stirring to combine. Let it simmer for about 2 minutes.
  5. Add in the heavy cream, honey, and lemon juice, mixing well. Allow the sauce to simmer until slightly thickened, about 3-4 minutes.
  6. Return the chicken to the pan, spooning the sauce over each piece. Cook for an additional minute to heat through.
  7. Garnish with chopped parsley before serving.

Notes

Feel free to switch Dijon for a milder mustard for picky eaters. Store leftovers in an airtight container for up to 3 days.
