  • 1/4 cup water (as needed)

Instructions

  1. In a large mixing bowl, combine the cottage cheese, all-purpose flour, baking powder, and salt.
  2. Stir in the olive oil and the egg. Mix thoroughly until a dough begins to form.
  3. Gradually add water, one tablespoon at a time, until the dough is soft but not sticky.
  4. Transfer the dough to a floured surface and knead for about 5 minutes until smooth and elastic.
  5. Divide the dough into small balls, about the size of golf balls, and roll each ball out into a flat circle, approximately 1/4 inch thick.
  6. Heat a skillet over medium heat and cook each flatbread for 2-3 minutes on each side until golden brown.
