Ingredients

- 1 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (for ganache)
- 1/4 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In a separate bowl, cream the softened butter and sugar until light and fluffy.
- Beat in the egg yolk and vanilla extract.
- Gradually add the dry ingredients to the butter mixture, mixing until blended.
- Roll the dough into small balls and place them on a baking sheet.
- Use your thumb to make an indent in each ball.
- Bake for 10-12 minutes, then remove and let cool.
- For the ganache, heat the heavy cream until just boiling, then pour it over the chocolate chips in a bowl and let sit for a minute. Stir until smooth.
- Spoon the ganache into the indents of the cooled cookies. Allow to set before serving.
Notes
Store cookies in an airtight container at room temperature for up to a week. They can also be frozen for longer storage.
