Ingredients

- 1 lb chicken breast
- 1 cup rice (your preferred variety)
- 2 medium zucchinis (sliced or diced)
- 3 cloves garlic (minced)
- 2 tbsp olive oil
- 1 tbsp Italian seasoning
- 1 tsp salt
- 1/2 tsp pepper
- 2 cups water or broth
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the rice, sliced zucchini, and minced garlic.
- Add the chicken breast to the mixture and drizzle with olive oil, Italian seasoning, salt, and pepper. Mix everything until well combined.
- Transfer the mixture into a greased baking dish, spreading it evenly.
- Pour in enough water or broth to cover the rice.
- Cover the dish with aluminum foil and bake for about 30-40 minutes, or until the rice is tender and the chicken is cooked through.
- Remove the foil and bake for an additional 10 minutes to achieve a bubbly, golden top.
Notes
Allow leftovers to cool completely before storing in an airtight container. Can be stored in the fridge for 3-4 days or frozen for about three months.
