Ingredients

  • 1 cup rice (your preferred variety)
  • 2 medium zucchinis (sliced or diced)
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 cups water or broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the rice, sliced zucchini, and minced garlic.
  3. Add the chicken breast to the mixture and drizzle with olive oil, Italian seasoning, salt, and pepper. Mix everything until well combined.
  4. Transfer the mixture into a greased baking dish, spreading it evenly.
  5. Pour in enough water or broth to cover the rice.
  6. Cover the dish with aluminum foil and bake for about 30-40 minutes, or until the rice is tender and the chicken is cooked through.
  7. Remove the foil and bake for an additional 10 minutes to achieve a bubbly, golden top.

Notes
