Ingredients

  • 8 oz pasta (your choice)
  • 2 cups fresh tomatoes, chopped
  • 1 cup fresh basil, chopped
  • 3 cloves garlic, minced
  • 3 tbsp olive oil
  • 1/2 cup Parmesan cheese, grated
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Boil a pot of salted water and cook pasta according to package instructions until al dente. Drain, reserving a bit of the starchy water.
  2. In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, and cook in the skillet for 5-7 minutes per side until golden and cooked through.
  3. Add minced garlic to the skillet and sauté until fragrant, about 30 seconds.
  4. Toss in the chopped tomatoes and fresh basil, cooking for about 2-3 minutes.
  5. Mix cooked pasta into the skillet, adding reserved pasta water as needed.
  6. Serve topped with freshly grated Parmesan cheese and enjoy.
