- 2 chicken breasts
- 8 oz pasta (your choice)
- 2 cups fresh tomatoes, chopped
- 1 cup fresh basil, chopped
- 3 cloves garlic, minced
- 3 tbsp olive oil
- 1/2 cup Parmesan cheese, grated
- Salt, to taste
- Black pepper, to taste
Instructions
- Boil a pot of salted water and cook pasta according to package instructions until al dente. Drain, reserving a bit of the starchy water.
- In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, and cook in the skillet for 5-7 minutes per side until golden and cooked through.
- Add minced garlic to the skillet and sauté until fragrant, about 30 seconds.
- Toss in the chopped tomatoes and fresh basil, cooking for about 2-3 minutes.
- Mix cooked pasta into the skillet, adding reserved pasta water as needed.
- Serve topped with freshly grated Parmesan cheese and enjoy.
Notes
Marinate chicken in olive oil, garlic, and herbs for enhanced flavor. Avoid overcooking tomatoes to keep their freshness.
