- 2 chicken breasts, diced
- 4 Yukon Gold or russet potatoes, diced
- 2 cups shredded cheddar cheese
- 1 cup cream
- 2 cloves garlic, minced
- 1 onion, diced
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine the diced potatoes, chicken, shredded cheese, cream, garlic, and onion.
- Season with salt and pepper according to taste.
- Pour mixture into a greased baking dish, spreading evenly.
- Dot the top with small pieces of butter.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake for an additional 15 minutes, until potatoes are tender and the top is golden brown.
Notes
For a crunchier topping, add crushed crackers or breadcrumbs during the last 10 minutes of baking.
