Ingredients

  • 2 chicken breasts, diced
  • 4 Yukon Gold or russet potatoes, diced
  • 2 cups shredded cheddar cheese
  • 1 cup cream
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine the diced potatoes, chicken, shredded cheese, cream, garlic, and onion.
  3. Season with salt and pepper according to taste.
  4. Pour mixture into a greased baking dish, spreading evenly.
  5. Dot the top with small pieces of butter.
  6. Cover with foil and bake for 45 minutes.
  7. Remove foil and bake for an additional 15 minutes, until potatoes are tender and the top is golden brown.

Notes

For a crunchier topping, add crushed crackers or breadcrumbs during the last 10 minutes of baking.
