Ingredients

  • 1 lb Boneless, skinless chicken breast
  • 1 cup Wild rice
  • 8 oz Fresh mushrooms, sliced
  • 1 cup Cream
  • 2 cloves Garlic, freshly minced
  • 2 tbsp Butter
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, melt the butter. Add the sliced mushrooms and sauté until they’re golden and tender.
  3. In a large mixing bowl, combine the cooked wild rice, sautéed mushrooms, garlic, chicken, cream, salt, and pepper.
  4. Mix everything until well incorporated.
  5. Transfer the mixture into a greased baking dish.
  6. Bake it in the oven for about 30-35 minutes or until the chicken is cooked through and the casserole is bubbling hot.

Notes

Feel free to substitute chicken with turkey or use a dairy-free cream. For added flavor, try adding onions while sautéing or a sprinkle of cheese before baking.
