- 1 lb Boneless, skinless chicken breast
- 1 cup Wild rice
- 8 oz Fresh mushrooms, sliced
- 1 cup Cream
- 2 cloves Garlic, freshly minced
- 2 tbsp Butter
- 1 tsp Salt
- 1/2 tsp Pepper
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, melt the butter. Add the sliced mushrooms and sauté until they’re golden and tender.
- In a large mixing bowl, combine the cooked wild rice, sautéed mushrooms, garlic, chicken, cream, salt, and pepper.
- Mix everything until well incorporated.
- Transfer the mixture into a greased baking dish.
- Bake it in the oven for about 30-35 minutes or until the chicken is cooked through and the casserole is bubbling hot.
Notes
Feel free to substitute chicken with turkey or use a dairy-free cream. For added flavor, try adding onions while sautéing or a sprinkle of cheese before baking.
