Ingredients

  • 2 cups cooked and shredded chicken breast
  • 4 cups frozen or fresh hashbrowns
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1/4 cup melted butter
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the hashbrowns, shredded cheddar cheese, cream of chicken soup, sour cream, melted butter, salt, and pepper. Stir until well mixed.
  2. Fold in your shredded cooked chicken until evenly distributed.
  3. Transfer the mixture into a greased baking dish.
  4. Bake in a preheated oven at 350°F (175°C) for 45-50 minutes or until the top is golden and bubbly.

Notes

For a crispy top, broil the casserole for a couple of minutes at the end. You can substitute chicken with shredded turkey or use dairy-free cheese if needed.
