- 2 cups cooked chicken breast, chopped
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1.5 cups shredded cheddar cheese
- 1 packet taco seasoning
- 1 cup cooked rice
- Salt, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine black beans, corn, salsa, rice, taco seasoning, and chopped chicken breast.
- Mix everything well until evenly coated and blended.
- Pour your mixture into a greased baking dish, spreading it evenly.
- Top generously with shredded cheddar cheese.
- Bake in the oven for about 25-30 minutes, or until the cheese is bubbly and melted.
Notes
For an extra crispy cheese topping, place the casserole under the broiler for the last few minutes of baking.
