- 1 cup shredded mozzarella cheese
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente, about 8-10 minutes. Drain, reserving about ½ cup of pasta water.
- In a large skillet, heat the unsalted butter and olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant and golden brown.
- Lower the heat, then stir in both the Parmesan and mozzarella cheeses, mixing until they melt and coalesce into a creamy sauce. Gradually add the reserved pasta water to adjust the sauce’s consistency.
- Toss the cooked spaghetti in the skillet, ensuring every strand is well-coated in the rich, cheesy garlic sauce. Season with salt and pepper to taste.
- Plate the pasta, garnishing with chopped fresh parsley and a sprinkle of extra Parmesan cheese.
Notes
For added richness, broil the spaghetti for a few minutes after plating for a crispy texture.
