- 1 pound chicken breast, diced
- 1 cup orzo
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 1 cup cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat. Add orzo and toast for 2-3 minutes until golden brown.
- Stir in diced chicken and minced garlic, cooking until the chicken is no longer pink.
- Pour in the cream, then add fresh spinach. Stir to combine.
- Stir in the Parmesan cheese until creamy. Season with salt and pepper to taste.
- Allow to simmer on low heat until all ingredients are nicely combined and creamy.
Notes
For a lighter version, use low-fat cream or plant-based cream. Add sun-dried tomatoes for tanginess or other vegetables for added nutrition.
